The floor, walls and ceiling should be kept clean. A cupboard
arrangement, whose sides and doors are made of wire netting, should be
provided, in which the food may be kept, in order that flies and other insects
cannot crawl over the food. All food should be kept in a place where rats,
mice, flies, etc, cannot reach them.
Kitchen Hygiene tips
Dirty damp cloths can harbor and spread bacteria. Use
disposable dishcloths or different cloths for clean and dirty jobs
Food contact should be cleaned regularly with a detergent or
soap and water. It surfaces can be rinsed properly afterwards or disinfectant
cleaner should be used.
Bins are a breeding ground for bacteria. If they are not
closed properly or have food on the outside, the bacteria can be transferred to
your hands. Use a pedal bin to avoid touching the lid and ensure it shuts
properly. Waste bins need to be cleaned and disinfected regularly.
Store individual food items separately in the fridge with
the meat items at the bottom.
Use an antibacterial cleaner that leaves no taint or odour
on chopping boards and surfaces in your kitchen where you prepare food.
Use an antibacterial wipe instead of cleaning cloths to
avoid the risk of cross contamination.
Use a disinfectant liquid to sanitize hard floor.
